Fast and Easy Ground Turkey Stuffed Peppers

INGREDIENTS:
3 medium green, red or yellow peppers
3/4 pounds extra-lean ground turkey (99% lean)
1/2 large onion, chopped
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1 medium tomato, finely chopped
3/4 cups shredded mozzarella cheese
1/4 teaspoon garlic powder
1/2 cup tomato paste
DIRECTIONS:
Preheat oven to 400° and cut peppers open by slicing off the top. Remove the seeds. Place on baking sheet pan coated with baking spray.
In a large skillet, spray cooking spray over medium-high heat. Cook and crumble turkey with onion, garlic, garlic powder, salt, pepper, and tomato over medium-high heat until meat is no longer pink, 8ish minutes.Let sit. Stir in most of cheese and tomato paste.
Fill pepper with turkey mixture. Sprinkle remaining cheese on top.
Bake uncovered for 20 minutes or until peppers are soft and mixture is warm throughout.
